

I don’t know about you, but I have a very big, sweet tooth! That was one of the hardest things for me to give up when I first started to lose weight. My friends would laugh because I would say I’m going to diet and next thing you know I’m outside eating a Hostess cupcake. It takes a lot of determination and will power to make a big lifestyle change. Once you get used to it, it gets easier to turn down the sweets.
Simple swaps make a huge difference. I love cheesecake but a traditional is very calorie dense and is tedious to make. This recipe is low calorie and so quick to make even for a busy mom like me who has a one-year-old clinging to her all day.
You only need three ingredients:
– Sugar free cheesecake pudding mix
– 1 container of sugar free Cool Whip
– Fresh strawberries
So here is a tip, do not just pour the pudding mix into the Cool whip because it will be chunky. You want to pour a little bit at a time and gently fold it in to the Cool Whip. The mixture will get thick and fluffy. You can eat the mousse as is or you can add fresh strawberries. There is no wrong way to eat it.

You can also experiment with different flavor combinations like a chocolate pudding with sugar free chocolate chips mixed in, or a vanilla mix with a sugar free chocolate sandwich cookie for a cookies and cream dupe.
I personally like to use this recipe as a cake frosting to save on calories. It works so well. It is delicious no matter how you serve it.
