

Hello friend! Today I am going to share a childhood favorite! Growing up my mom always made poke cakes during the summer. She made them a lot for 4th of July and decorated it with blueberries and strawberries. It was so yummy and a delicious treat. A poke cake is a type of dessert that involves poking holes in a baked cake (I like to use the bottom of a wooden spoon.) and then filling those holes with some kind of liquid or filling. The liquid or filling usually adds flavor and moisture to the cake, making it more delicious.
Ingredients:
- 1 box of sugar-free cake mix.
- 1 cup of cold water
- 1/2 cup of unsweetened applesauce
- 3 large eggs
- 1 (0.3 oz) box of sugar-free strawberry gelatin
- 1 cup of boiling water
- 1 cup of cold water
- Sugar-free whipped topping, for garnish
- Fresh strawberries, for garnish
Instructions:
- Preheat your oven according to the instructions on the cake mix box.
- In a large mixing bowl, combine the sugar-free cake mix, cold water, unsweetened applesauce, and eggs. Mix until well combined.
- Grease a 9×13-inch baking dish and pour the cake batter into the dish.
- Bake the cake according to the instructions on the box.
- While the cake is baking, prepare the strawberry gelatin. In a small bowl, dissolve the sugar-free strawberry gelatin in boiling water. Stir until the gelatin is completely dissolved. Then add the cold water and stir well.
- Once the cake is baked, remove it from the oven and let it cool for about 10 minutes.
- Use the end of a wooden spoon to poke holes all over the cake. Make sure the holes go all the way to the bottom.
- Slowly pour the strawberry gelatin mixture over the cake, making sure to fill all the holes.
- Place the cake in the refrigerator and allow it to chill for at least 2 hours, or until the gelatin is set.
- Once the cake has chilled, spread sugar-free whipped topping over the top of the cake.
- Garnish the cake with fresh strawberries.
- Slice and serve the sugar-free strawberry poke cake chilled. Enjoy!
Note: You can adjust the recipe to your taste by using different flavors of gelatin or adding other sugar-free toppings.
