

I love when I can have made ahead meals on hand. Especially now that the kids are going back to school. It can get pretty chaotic in the mornings. Somehow, they all seem to need my help at the same time. So, to be able to have a breakfast already made and ready to go is a life saver!
My kids are really starting to love oatmeal and that makes this mama so happy. But I know they don’t want it the same way every day. I try to keep it interesting by playing around with different mix ins and toppings. And this recipe is a winner!
Here is what you need:
-2 Eggs
-1/3 cup of Swerve Brown Sugar
-1 tsp Vanilla Extract
-2 tsp of Cinnamon
-1/2 tsp of Salt
-2 tsp of Baking Powder
-3 cups of Old Fashioned Oats
-1 cup of Nonfat, Almond or Coconut milk (I use Unsweetened Vanilla)
-1 cup of frozen Cherry Berry mix
Directions:
1. Preheat oven to 350 degrees. Spray a 9×13 pan with nonstick cooking spray.
2. Mix eggs, applesauce, Swerve, and vanilla until smooth. Stir in cinnamon, salt, baking powder and oats. add milk and frozen fruit and gently fold together. Spread into pan.
3. Bake for about 30 minutes. Slightly cool before serving. Serve hot or cold.
4. store for up to 2 days in fridge or freeze for quick breakfasts.
Enjoy plain or drizzle with sugar free maple syrup.
