

If you know me then you know I love lemons!! I will eat lemon with salt, lemon and carrots, lemon everything! Lemon is one of my favorite flavors. My mom even likes to tease me because I have a lemon dress. But hey what can I say? I guess I’m a little lemon obsessed.
lemons are not only super delicious but they are low in calorie and sugar. Lemons are packed with Vitamin C. Vitamin C is an antioxidant, which helps protect cells from damage. Vitamin C also helps your body make collagen for your skin, helps your body absorb iron, and supports your immune system.
One of my favorite lemon treats was always a lemon pie! It was creamy and tangy and oh so good! Unfortunately, the traditional pie is full of sugar and not very low on calories. I also wanted something that didn‘t take forever to make so thats where I got the idea of a lemon pie made with Greek yogurt and sugar free lemon pudding mix. And let me tell you it turned out amazing!
Here is what you need:
1 Packet Lemon Pudding Mix
3 Large Eggs
3 Cups of Plain Non Fat Greek Yogurt
10 Stevia Packets
Zest of one Lemon
1/2 of a lemons juice
1. Preheat oven to 350
2. Place all ingredients into a bowl a mix until smooth.
3. You can either pour mixture directly in a pie pan or use a graham cracker crust.
4. Place in oven for 30 minutes. Let cool and refrigerate for about 3 hours and enjoy!
