Fruit spring rolls are a delicious and light twist on the traditional spring roll. Instead of the usual savory fillings, these spring rolls are filled with a variety fruits (it is best to use in season fruits so it doesn’t cost so much), making these spring rolls a light and healthy dessert or snack option. My kids love being able to help make their food. It makes them more likely to actually eat it.
Here’s how we made our spring rolls:
Ingredients:
-Rice paper wrappers (You can use brown or white but for our recipe we are using white.)
-Any fruits of your choice (such as strawberries, mangoes, kiwis, blueberries, or any other fruits you prefer) it is cheaper to use in season fruits.
We used:
-Mango, watermelon, kiwi, strawberries,
-Chamoy/tajin drizzle. Basically, just mix chamoy and tajin together.
Instructions:
- First, wash your fruit and cut them into thin strips or bite-sized pieces. Make sure they are short enough to fill the wrapper.
- Fill a bowl with warm water. Dip one rice paper wrapper into the water for a few seconds until it becomes soft and pliable. Not to long or it will be hard to work with.
- Carefully place the softened rice paper onto a clean, flat surface we used a cutting board.
- Place a few pieces of fruit in the center of the rice paper, leaving some space on the sides.
- Fold the sides of the rice paper over the fruit, and then gently roll it up tightly, tightly is the key here! If not the rolls will be hard to manage.Think of a burrito.
- Repeat until your hearts desire or until you run out of spring roll wrappers.
- Serve and enjoy. If you want you can also drizzle them with honey or a sweet dipping sauce but, my kids love chamoy and tajin so that’s what we did.
Feel free to experiment with different in season fruits and even add some m shredded coconut or chopped nuts for extra texture and flavor. Enjoy!
