

Cilantro lime chicken tacos are a delicious and flavorful Mexican dish that combines tender chicken marinated in cilantro and lime juice, served in soft tortillas with a variety of toppings usually cilantro and onion. I love buying tacos from a taco truck, but the prices have been so expensive. So why go buy them when you can easily make them! Here’s a simple recipe to make cilantro lime chicken tacos at home:
Ingredients:
- 1 lb boneless, skinless chicken breasts (leanest cut of chicken), sliced thinly.
- 1/4 cup fresh lime juice (about 2 limes)
- 2 cloves garlic, minced
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- 10 corn tortillas
- Toppings of your choice: My family usually just adds cilantro, onion and salsa. I have a Verde salsa recipe linked here: Easy Chili Verde (sugarfreemommy.com)
Instructions:
- In a bowl, combine lime juice, minced garlic, chopped cilantro, salt, and pepper. Mix well to create the marinade.
- Place the chicken pieces into a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure it’s well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to 4 hours) to allow the flavors to infuse into the chicken.
- While the chicken is marinating, prepare your desired taco toppings and set them aside.
- Preheat a grill or skillet over medium-high heat. If using a skillet, add a little oil to prevent sticking.
- Remove the chicken from the marinade and throw out the remaining marinade.
- Grill or cook the chicken in the skillet for about 4-5 minutes per side or until cooked through and slightly charred. I love mine super charred, so I cook a little longer.
- Warm the tortillas on the grill or in a dry skillet for about 30 seconds on each side until they are pliable.
- Assemble the tacos: Place some of the cooked chicken on each tortilla, and add your favorite toppings on top.
- Serve the cilantro lime chicken tacos immediately with lime wedges on the side for extra tang.
